Braeburn
Farm is a beef cattle and dressage horse training facility
situated on 400 acres of rolling farmland in the Piedmont region
of NC. We are midway between the Triad on the west and the Triangle
on the east. Beef cattle have been raised here for 30 years
with a transition to grass fed beef in 2002. Traditionally, we raised
Angus cattle but are moving to New Zealand Red Devon because of
100 years of grass fed genetics and carcass quality.
Animals are ultrasounded at about one year of
age to determine if their meat will be tender. Those with a good
tenderness score are intensively grazed without grain, antibiotics
or growth stimulants. Finished animals are processed at about 20
months of age, dry aged for 3 weeks, and flash frozen in a USDA
inspected facility 15 miles away. Frozen cuts are stored in a NC
state inspected facility at the farm. Beef is sold at the farm or
shipped in 25, 50, 100 lbs units or by the side. Each unit is representative
of all cuts in the cow. Orders for a side of beef can be processed
to the customer's specifications.

Captain John S. Pope Farm is located
in the rolling hills of Orange County NC, about 20 miles north of
Chapel Hill. Operated by third, fourth, and fifth generation descendents,
the farm raises grass fed free-range Dorper lambs. The result
is tasty, low fat meat with higher levels of Omega-3 fatty acid,
CLA and Beta-carotene.
Our Dorpers graze year-round through careful
selection of grasses with legumes that produce nitrogen and reduce
the need for commercial fertilizer. Ponds and wetlands are fenced
out to protect soil and water quality. Fresh deep well water is

Hickory
Nut Gap Farm is a multi-generational family farm located
15 minutes east of Asheville in the mountains of Western North Carolina.
We offer chicken, turkey, eggs, pork, beef, lamb, and eggs
raised without hormones and antibiotics on fresh green pasture.
Our chickens and turkeys live in a portable day range system, which
is moved to a new paddock of fresh grass three times a week. The
cattle and sheep are intensively grazed on grass from March through
November throughout their entire life on the farm. Pigs utilize
their natural instinct to root, which helps to turn our barn bedding
into compost and reclaim overgrown pasture areas.

Hogan's
Magnolia View Farm is a small family farm, supplying grass-fed
beef to the Chapel Hill/Durham community. Grass-fed beef
is not only lower in fat than grain-fed beef, but has higher levels
of healthy fats including Omega-3 fatty acids and CLA. We offer
a full range of grass-fed beef cuts, vacuum packed to preserve freshness.
Our cattle are pure Herford beef cattle. They
eat either fresh pasture growth or stored grasses such as hay or
hay silage. They are allowed to grow at a natural rate; calves stay
with their mothers. We have recently introduced a new Red Devon
bull. The Red Devon is a heritage breed from New Zealand, superbly
suited to grass feeding. Their meat is flavorful and moist and they
gain weight efficiently on grass. Our herd lead stress-free lives
on about 40 acres of pasture, with free access to water and shade.
We do not use any hormones, antibiotics or grain. The herd stays
healthy due to the lack of crowding, free-range pasture, and careful

Mulberry
Gap Farm is located 30 minutes north of Asheville in western
North Carolina. We pasture our beef, pork, lamb, chevon, chickens
and turkey in order to produce healthier hormone- and antibiotic-free
meats.
Our Devon cattle, Dorper/Katahdin sheep, and
hogs are all rotationally grazed from March to November. Our hogs,
chicken, and turkey are the only animals that receive supplemental
grain along with their fresh grass. Our goats are used primarily

Pleasant Gap Farm, located in the mountains

At Pleasant Gap Farm we've taken our beef to
a higher level with a crossbreeding program using heritage cattle
producing healthy, lean, and delicious beef cuts. Our cattle are
grass-fed and finished utilizing a salad mix of native, improved

For your peace of mind, all Pleasant Gap Farm
products are processed and packaged in a USDA inspected processing
facility. Your assurance of this inspection is on our label. Pleasant
Gap Beef is dry aged 14-21 days prior to processing into individual
cuts. Dry aging helps to concentrate and intensify the beef flavor
and maximize tenderness. All beef is labeled with cut description

and halves by carcass weight; quarters typically weigh 90-110 pounds.

Wilson College Farm manages a 275-acre farmland, with all
the work done by students of the college, which features "a
triad of academics, work, and service." Many pre-vet and sustainable

Farming in America since 1626, Winn Family
Farms is entering its twelfth generation of operation. Two of our
three farms are recognized as Virginia Century Farms. Dedicated
grassfarmers, the Winn Family produces a flock of hair sheep solely
on pastures and hay produced without pesticides. Our animals receive
no antibiotics or growth-promoting hormones, and we do not feed
any animal by-products, grain or other supplements, except for
a mineral blend specially formulated for sheep.
Lamb from hair sheep, especially when
raised totally on a diet of forages, is a mild and tender addition
to the family table.
Utilizing USDA-inspected harvest and packaging,
and NCDA-licensed refrigerated transport capacity, the Winn Family
can bring the safest possible locally-produced lamb directly to
you or your neighborhood butcher. Our flock is large enough and
has aseasonal breeding capability, so we can meet demand for lamb
cuts, whole lamb, and live lambs throughout the entire year.
A reasonably good selection of cuts is kept
on-farm for consumers' immediate needs, and live lambs may be bought
any day by appointment. We request a ten-day advance order for whole
carcass or locker lambs cut to your special order. This allows for
the preferred dry-aging, butchering, and freezing in vacuum-sealed
packaging. We can accommodate special religious needs at harvest.
We select our Katahdin X Dorper ewes for ability
to thrive and produce well-muscled lambs on forages alone. Our Dorper
rams throw lambs that supply excellent carcass traits for meat.
All of the animals are fenced out of riparian
areas to preserve soil and water quality. They receive free choice
mineral and fresh wellwater in unlimited quantity. The flock is
protected by perimeter fencing and Maremma livestock guardian dogs.

Yesterways
Farm produces pastured chickens, turkeys, pork, and beef.
"All our animals are grassfed. Even the pigs run on pasture
or woodland." The cows get no grain. Chickens and turkeys get
a special feed formulated by the farm that does not contain any
meat or bone meal. The broilers and turkeys are moved daily to fresh
grass, and the laying hens are moved to fresh grass on a regular
basis. The pigs are fed whole grain, "not junk food such as
potato chips, cakes or stale bakery goods."
All animals are free of antibiotics, hormones,
and other drugs. No chemical fertilizers are used on the land. The
